It is an emblematic jam of the South West. With us, it is called Spanish melon, but we can find this fruit, which externally resembles watermelon, also under the names of Citre, Watermelon or Gigerine. When cooked, the flesh takes on a translucent shade and its taste is somewhat reminiscent of watermelon. It is sublimated here with a touch of Bourbon vanilla to keep the real out of the fruit. Otherwise, it is customary to associate it with orange, lemon or star anise.
