To make a good jam, you need good fruit! No strawberries grown 2m high with pipes as an infusion and which never smelled of earth. A judicious blend of Charlotte and Mara des Bois cultivated in the open fields in the south-west of France on the slopes of the Garonne. Picked when perfectly ripe, the strawberries exude their scent full of sun and southern flavors.
The little jam secret? Reduce the fruit before incorporating the sugar to further concentrate the flavors. No, it's not profitable, but yes, it's so good!
