Cedrat jam

This cedrat marmalade

is a jam where the ratio between acidity and bitterness is ideally balanced thanks to this exceptional fruit that is Cedrat.  Unlike other citrus fruits, ziste (white part which is under the rind) is not at all bitter.  This is all its appeal because its pulp is very reduced and not very juicy.  The Corsican Cedrat is renowned as being the tastiest!
