Cherry Jam
For 10 jars (about 250 ml) _
600 g of sugar * 1 vanilla bean, 1 star anise, 150g of honey
1kg of very ripe cherries but not too soft!
Combine the sugar with 500 ml of water in a pot. Heat, stirring, until the sugar is completely dissolved. Split the vanilla pod lengthwise, and scrape off the pulp. Add it along with the bean and star anise to the sugar mixture. Cook over medium heat for 15 minutes. Meanwhile, wash the cherries, dry them with paper towels, and remove the pits.
After cooking, remove the star anise and the vanilla bean. Stir in the cherries and honey, then mix well. Bring to a boil while continuing to stir, then lower the heat and let the mixture cook for about 1 hour 30 minutes. Stir occasionally to prevent the mixture from sticking.
As the cooking time depends on the variety of cherries chosen, carry out the first consistency test after 50 minutes.
