Banana Jam

 A kilo of bananas.  700g of granulated sugar.

 Remove the skin from your bananas and cut them into slices.

 Over low heat, throw them to a boil in a saucepan for five minutes at most.

 Once cooking is complete, mix your fruit in a bowl with the sugar which, over a low heat, should take all its time to melt well.  Up to the pearl of the syrup, the boil should not weaken.

 Only then, with a pinch of cinnamon powder and a very light pepper, can you add the juice and zest of two lemons to which you will add the value of two small glasses of rum.

 So think about skimming and then potting.
